Is there any way to get event log output to something easier to read and scan through, like one event per line starting with the current time and machine name in a flat text file like the way Unix does it?

Event Logger output
Don't think there is, but it's easy to select your columns priority - so if you click on the computer's tab, all of them will appear in alphabetical order and group them.
I find that easier for me :o)

I just want to forgo using Event Viewer entirely. It utterly sucks for trying to view logs, and there's nothing available to make dealing with these logs any easier. At least if Windows used the same log output format every other operating system on the planet uses, Windows users would be able to use their tools for doing stuff like emailing all but the mundane log entries on an hourly basis, etc.

So is hijacking a thread with a completely unrelated topic.
Get a news reader that shows threads and you will plainly see that I did not hijack a thread.
